Nightmare of the Wolf - Honey Cakes

Young Geralt ( and grown up Geralt too!) would appreciate the effort.

The Witcher is one of my most favorite game franchises. So when Netflix rolled out it’s animate show Nightmare of the Wolf, I was excited.

 

The honey cakes were so integral to the plot, so we decided to recreate them. They are soft and can be crumbly, but taste delicious and it’s easy to see why young Geralt liked them so much.

Honey Cakes – The Witcher – Nightmare of the Wolf Recipe

This is one of the most requested recipes we have ever had. There are many versions of this on the Internet, but ours honors the idea of simple cooking. Having said that, this was a really hard recipe to get just right. Hopefully our trial and error will make your Witcher themed party easier!
Prep Time 30 minutes
Cook Time 40 minutes
additional time at lower temp 15 minutes

Ingredients

  

  • 2 cups flour + a little extra
  • 1 tbsp course salt
  • 1/2 tsp baking powder
  • 2 sticks unsalted butter softened to room temp
  • 3 large eggs beaten
  • 1/2 tsp vanilla
  • 3/4 cup sour cream
  • 1 cup honey see notes
  • non stick spray

Method

 

  1. Pre-heat over to 350
  2. Use parchment paper to line a round baking tin and spray liberally with non-stick cooking spray.
  3. Sift dry ingredients together and set aside
  4. Beat 3 eggs and set aside.
  5. Mix the honey and softened butter together until it is well incorporated.
  6. Add vanilla
  7. Add beaten eggs a little at a time
  8. After mixing, add dry ingredients. The batter should be creamy but not too runny. Add (a tablespoon at a time) extra flour if your mixture is too runny.
  9. Fold in sour cream
  10. Pour into circular pan mold
  11. OPTIONAL – Add 3 – 4 tablespoons of honey after pouring 1/4 of the cake mix into the pan. You'll get honey "spots" the way you see it in The Witcher – Nightmare of the Wolf.
  12. Bake for 40 mins at 350 and then lower the oven temp to 325 and cook for an additional 15 -20 minutes or until a toothpick inserted into the center comes out clean. (A little sticky is okay) DON'T OVERCOOK!

Notes

To get the honey pockets in the bread the way you see them in the show, you have to add some honey into the batter in increments.

 

This was a really difficult recipe to get “just right”. Most honey cake recipes are too dry and honestly the texture is a big turn off. It is easy to overbake this recipe, but after playing with the basic recipe for honey cakes, we discovered that extra butter, and more sour cream was the winning combination and didn’t end up being dry.

 

NOTE: We also used lemon extract and lemon zest to one cake (eliminating the vanilla) and it made a bright citrus flavor honey cake.

 

NOTE #2: Honey choices: Use a wildflower honey or something other than clover honey. We used Macadamia Nut Blossom honey and it created a fragrant, slightly bolder, honey taste.
