Lamont's Grilled Lemon Chicken

It’s not the BIG one, but a close second.

Grilled chicken thighs , lemon, Lamont's Lemon Grilled chicken!

Recently on the Pilot Season podcast we reviewed the pilot episode of this series “Crossed Swords”. The antics and deep humor of Red Foxx and the entire cast gave generations of watchers nightly laughs and cultural moments we’ll never forget. Lamont did love lemon, so here is a recipe to honor that!

Lamont’s Lemon Grilled Chicken

Lamont's love of lemon is our inspiration for this dish, junkyard and grill are optional as you can cook this chicken in the oven too. Two flavor profiles, one great recipe to pair with a classic show.

Cook Time 45 minutes

Ingredients

  

  • 5 – 6 Chicken Thighs bone in
  • 1 large Lemon Sliced
Marinade
  • 1 large Lemon Squeezed
  • 1 tsp Sugar optional
  • 1/2 cup Olive oil
  • 3 tsp Pepper
  • 1 tsp Red Pepper Flakes
  • 3 tsp Crushed Garlic
  • 3 tsp Lemon Juice Extract
  • 4 tsp Orange Juice

Equipment

  • grill optional ( you can bake this recipe)

Method

 

  1. Combine all ingredients for the marinade into a large bowl or Ziploc bag. Whisk or combine well.
  2. Add chicken to the marinade and refrigerate for 2 hours or for best results, let sit overnight.
  3. Slice one lemon in thin slices ( 1 per chicken thigh)
  4. On a medium heat grill, cook chicken to internal temperature of JUST 165 degrees. (About 35 – 45 mins, flipping the chicken once halfway through) You can cook this chicken in foil packets on the grill, drizzling the left over marinade into the foil, or on the grill directly depending on your desired flavor profile.
Oven Directions
  1. Slice one lemon in thin slices ( 1 per chicken thigh)
  2. Follow the steps above, but add chicken to a baking sheet and drizzle the left over marinade onto the pieces.
  3. Add lemon slices on top of the chicken and bake at 350 for 40 mins or when chicken reaches 165. Boneless thighs; half the time.
  4. Add lemon slices on to of chicken to either the foil packets, or directly to the chicken on the grill AFTER the first flip

Notes

If you grill the chicken (which adds a nice smokey profile to the meat), keep the temperature in a steady medium range. Don’t cook on a high flame or very high heat.

 

Add the lemon slices as garnish if you want a brighter flavor the chicken. Add the lemon to the cooking chicken if you want a deeper lemon flavor. 

 

Throw out any left over marinade, and be sure to wash everything that touches raw chicken VERY well!
