Mrs Allardyce's Cucumber and Cream Cheese Tea Sandwich

…for a treat when you don’t want a “burnt offering”.

The 1976 classic, Burnt Offerings was a supernatural  horror film with a truly all star cast.  Karen Black, Oliver Reed, Bette Davis Lee H. Montgomery and Burgess Meredith.

 

Now, I chose this film as a Cinema du Fromage selection, and it was absolutely a great movie for it’s time. (1976) The undertaker / hearse driver was so spooky! It is widely interpreted as a commentary on the dissolving of the American family because of materialism.

 

The cucumber sandwich idea came from the Mrs. Allardyce who seems to be woman the family is caretaking.  Our main character Marian, seems to envision her as a proper and perhaps stately woman. The cucumber sandwich is an iconic addition to afternoon tea and just seemed to fit.

Mrs Allardyce's Cucumber and Cream Cheese Tea Sandwich

Mrs Allardyce and her home are the epitome of Southern charm. In hospitality circles, tea sandwiches are a mainstay and one that never goes out of style. Paired with mint tea, these cucumber and cream cheese finger foods are the perfect getaway from the summer heat ... and make a nice offering too!

Ingredients
  

  • 8 oz Cream Cheese
  • 1 cup Sliced Cucumber (Optional: seed them by cutting out of the center)
  • 1/4 cup Chives, minced or finely chopped
  • 1 tbsp Mayonnaise (not Miracle Whip) (Optional: increase to 2 tbls for creamier spread)
  • 3 tbsp Dill, chopped finely
  • 1/4 tsp Salt
  • 1/4 tsp Ground Black Pepper
  • 10 slices Bread (White is traditional but any soft bread is acceptable)
  • 3 tbsp Mint, freshly crushed

Method
 

  1. *Trim the bread of crusts using a sharp knife. Set aside.
  2. Combine all other ingredients except the cucumber in a bowl.
  3. Mix with a spatula until thoroughly incorporated.
  4. Gently add the cucumber to the mixture.
  5. Spread the mixture on the bread in a thick layer.
  6. Cover with a second slice of bread and cut into triangles.
  7. Sprinkle very lightly with crushed mint

Notes

You can make these sandwiches ahead of time and let them rest in the refrigerator before serving.
 
Add a nice, and very relaxing mint tea on ice to compliment this traditional afternoon tea food.
