Method
- Bring water and sugar to a boil. Whisk constantly. Set aside.
- Puree the raspberries in a blender or food processor.
- Add the mixtures together and incorporate fully.
- Using a kitchen strainer, strain the mixture into a bowl.
- Using a lined cup cake tin or small silicon mold to pour the mixture into individual cups 1/2 way.
- Freeze for 4 hours
- To serve - invert the frozen cups onto a small plate. Garnish with a raspberry, raspberry sauce and / or sprinkle "snow" (confectioner's sugar) on top.
To make raspberry sauce
- Reserve 1/4 of a cup of raspberry mixture and refrigerate.
- Pour over the ice
