Edward Scissorhands (1990) had several iconic scenes, but perhaps none as beautiful as his sculpting of ice sending snow into the valley below.

I don’t think it would be snowing now if he weren’t still up there. Sometimes you can still catch me dancing in it.

 

This recipe is fun, easy and sweet. Always use confectioners sugar over the top to make it “snow”.

Raspberry Ice - Perfect for sculpting with your own scissors!

Sculpted Ice Raspberries Dessert

Our raspberry ice can be gently sculpted with toothpicks or cocktail swords for a cutting edge!

Cook Time 5 minutes
Total Time 4 hours 10 minutes

Ingredients
  

  • 2 cup of water
  • 3 cups of raspberries fresh
  • 3/4 cup of sugar
  • *** Note if you use frozen berries decrease the water by 1/4 cup

Method
 

  1. Bring water and sugar to a boil. Whisk constantly. Set aside.
  2. Puree the raspberries in a blender or food processor.
  3. Add the mixtures together and incorporate fully.
  4. Using a kitchen strainer, strain the mixture into a bowl.
  5. Using a lined cup cake tin or small silicon mold to pour the mixture into individual cups 1/2 way.
  6. Freeze for 4 hours
  7. To serve - invert the frozen cups onto a small plate. Garnish with a raspberry, raspberry sauce and / or sprinkle "snow" (confectioner's sugar) on top.
To make raspberry sauce
  1. Reserve 1/4 of a cup of raspberry mixture and refrigerate.
  2. Pour over the ice
